What a week at Leiths !!
Let me tell you how it went .
TUESDAY – It was a glorious day in London , and we were lucky enough to be visiting an english vineyard. I hadn’t heard that much about english wine so was really looking forward to seeing how it survived in our climate and more importantly how it tasted . Boy o boy was I shocked , it was the best sparkling wine I have ever drank !!!! Every sip tasted like a big fat plump strawberry , it was sensational !!Give me a bottle of that over rose champagne any day ! I hear you gasp but you seriously have to believe me . We had a tour around the vineyard , it was so pretty , so calm and it made me happy to hear that english wine is really on the up . It is now being sold in restaurants in London and had collected many awards . Go British produce !!!!!! We are studying for WSET along side the Leiths Diploma so this was a really helpful and informative day out .
WEDNESDAY – This was a creative duck day . We got given the bird and we had to cook as much of it as we could , and make a beautiful plate of food . I have to admit that duck isn’t my favourite meat so I thought long and hard about what I would do . I came to the conclusion that I would do a take on Tom Kerridge famous duck dish that he cooked on the Great British Menu. I made a duck confit salad , with stunning spices such as star anise , coriander seeds , fennel seeds to name a few , then I sous vide the duck breast keeping up with the theme of spices , a jus made with the duck bones , and my piece de resistance was triple cooked duck fat chips . I was quite worried about my chips and the crispiness !! I had to stand over the duck fat three times for 8-10 mins each time with a steady temperature , it worked though and they were delicious !! In fact , as soon as I had served to my teacher , I devoured them !!!
THURSDAY – Well this was more of a prep day for friday . We had to make a puff pastry , don’t get me wrong , its long and time consuming but so so worth it !!! Home made puff tastes AMAZING ! We also had to make a praline , (this has more sugar in it than the whole of willy wonka’s chocolate factory ) I made it with hazelnuts and it looked so pretty and tasted fabulous !
FRIDAY – Creative dessert day , I absolutely loved this day so much , I really love making desserts and obviously eating them too ! I decided to go for a classic french dessert . I used my puff pastry to make a mille-feuille , it was filled with vanilla creme patisserie and blueberries , accompanied with strawberry and praline parfait , prosecco sabayon and some sugar work with hazelnuts . I worked hard and researched a lot so was happy with the end product .
This is my last blog for Leiths sadly . We only have 20 days left and am very sad about this , I feel like I have been wrapped in a cocoon , I really have not had to think about anything apart from food ( and time plans ) for the last six months , and at 34 years of age , that really is a blessing ! 3rd July is coming quicker than I could ever have imagined and after that I will be starting my new career ,knowing that I have had the best possible training there is . It’s a scary thought but I have never been so excited in my life . I will be pursuing my dream and passion to become a private chef and own a very small catering business and I really couldn’t have done it without Leiths . I cant begin to tell you how thankful I am to all the teachers . It may sound cliche but if anyone is reading this and debating as to whether to go to Leiths , all I can say is DO IT ! You wont regret it , I promise you !
